My All-Time Favorite Chicken Tortilla Soup….EVER!

For dinner last night, I used The Pioneer Womans recipe for Chicken Tortilla Soup. It was a perfect night (snowing in Denver, shock I know, lol) for such a yummy soup! Her recipe is exactly my ideal version of what Chicken Tortilla Soup is suppose to be. There are so many varieties of this recipe out there and this one is ‘spot on’ to myself and family. I love her recipes and her commentaries how to prepare them. In my mind, I feel like she has the voice of Reba McEntire. (That is a good thing!) The recipe has enough meat to make it hearty, enough veggies to make it healthy and the flavor is on point.

And since I cooked too much chicken last night, tonight we will be having Chicken Quesadillas using home-made tortillas made using this recipe,

But, little does my husband know, but he gets to roll them out again. His tortillas come out nice and evenly round, whereas mine look not roundish at all. Does anybody else have this problem? Don’t they always taste better when they are pretty?

Besides, with the husband being in the kitchen with me, it gives us time to re-connect. Homemade tortillas rolled out by my sweet husband are the best!

Denveristas to the Rescue….

Is there anybody that loves Pinterest as much as I do? I think that some days I need an intervention to get off of their site and stop pinning. : )
Anybody ever fall in love with one of their pins and totally fail at making it? Or just don’t have the resources to make it? I know I have more than my fair share of Pinterest Fails. Well, I was thinking, maybe our wonderful Denveristas would like to come to the aid of our fellow Denveristas.
Just let us know which Pin you love and need help with and maybe we can find someone on here that can help you out.


I am the type of person that shops for presents for birthdays and holidays all year. It has always worked out for me. In fact, I have half of my families birthday presents already stored and stashed for their big days.
Let me start by saying, I was prepared for the gift giving part of the season; but, not much else for the holidays. It took me weeks to finally decorate the Christmas tree. And then when I did, I only gave it ten minutes and then had to stop and devote my time to working on something more urgent. Yikes! The rest of the decorations didn’t get hung up or displayed, they stayed in the boxes. It was a display of the bare basics at my home this year for Christmas.
Now that Christmas has passed, I plan to devote at least one day a month to work on my Pinterest crafts. I would love to devote one day a week to it, but my schedule laughs at that thought. It is what it is…
My goal is too devote one day a month, we shall see how long that lasts. Wish me luck, you know I am going to need it. : )
